Are Raw Veggies Always Better?

You'd think that boiling veggies would suck the nutrients right out of them. But in the case of carrots and broccoli, that may not be so.

Seems that lightly boiling these two veggies can actually increase the concentration of carotenoids. The downside? It also depletes their phenolic compounds.

To get my 5 servings of veggies everyday - I make vegatable soup out of all my left over dinner vegatables and have it almost everyday for lunch. The taste changes as you add different contents. I'm looking forward to my vegatable/beef soup this lunch time.

Some people are genetically more capable of tasting bitterness in broccoli and other vegetables. I have read that cooking broccoli in milk will take away the bitterness. Feel free to make a political joke if you wish.

Please help me find a way to like broccoli. I know it's good for me but unless I slather it with sauce I can't handle it.

Any food cooked above 118 degrees destroys the enzymes in it,you'll want to add the proper enzymes during comsuming your meal,so your body can properly digest that food and your cells can absorb then utilize the nutritional value.The Abion labratory has a patent that gaurantees that delivery.

I have found sauteing chopped onions, broccoli, asparagus, olives, spinach, garlic or other veggies + two scrambled eggs is good.

The most healthy post-workday drink I have experianced is a half and half Spicy V8 juice and Natural Lite beer. Serving of veggies and just enough alcohol to relax one after a full day on the fields of commerce. Cheers!

When cooking a large amount of broccoli, I use more water than normal and boil/steam the fresh broc, then I use the water in cooking my brown rice and any nutrients which may have escaped are thereby recaptured. Also, I use tamari instead of salt; it adds flavor and has less sodium, I believe.

Foe steaming you do NOT put the vegetables IN water. The idea is to cook them in the STEAM not the liquid. You can put them in a steamer (very cheap, buy them just about anywhere) or if you don't have one, put the vegetables on top of small balls of foil to keep them out of the water, and cover. For most vegetables a minute or two is plenty. If they are thicker like broccoli, just three minutes or so and serve right away so they won't get mushy.
