The Purple Plant That’s Great for Your Blood Sugar

Your blood sugar will be sure to salute you this Independence Day if you grill up some of this: eggplant.

Purple-skinned eggplant is full of phenols that help your body better use blood sugar. And that’s great, because you don’t need extra blood sugar running around. Too much in the bloodstream could wreak havoc with your organs. But that’s not all eggplant’s got . . .

it would have been nice to know how many ml. of flavonoids are in a serving of this vegetable. I do like these and should eat more in place of meat dishes.

IT works! Eggplant water for blood pressure medicine. My mother in law has used it for 5 years instead of BP med. Most people who have tried her recipe have had positive results. You must not stop your medicine till the Dr says, you just can't mess around with strokes! She had very high BP and was on two strong medicines to get it stabilized. Now after 5 years she has had to begin taking a small dose of BP med. But she had 5 years free from dozing off, drooling from the corner of her mouth, and if she was a man she would have had 5 years free of the risk of impotency. She got high BP again after 5 years and while on regular Rx medicine had two strokes but recovered and is home again. She is 86! DIRECTIONS: Take one large eggplant, dice it skin and all. (not the flower) put it in a 1/2 gal GLASS jar, fill the jar with SPRING WATER, lid on the jar and refrigerate for 5 days. After 5 days the water is medicinal. After 10 days strain the egg plant, save the water and throw the eggplant away. Refrigerate or it will spoil. DOSING: take an oz. every time you take BP medicine. If you aren't on meds take an ounce twice a day. If on meds for BP you should see results in a week or two. If not you should see results in 2-4 weeks.

i didn't have very much of a waist a few months ago. Istarted changing my eating habits' leaving sweets behind and considering real age counseling about eating more fruits and vegetables. Apples have become my favorite and they have helped me reduce my waist from 44 inches to 36 in less than five months and starting to walk more. Thanks a lot REALAGE!

When freezing fresh berries it is far better NOT to wash them ahead of time, but to wait until you use them. Blue berries turn into mush when thawed after being wet. Pick 'em, dry 'em, bag 'em and get them in the freezer.

I love fruit, so when grapes, cherrys, blueberries, all the mellons are fresh
I buy wash, bag, them and freeze them. It's refreshing to grab a small bag
anytime of the day and enjoy them. Green seedless grapes are soo good.

I live in Asia and I have been constantly told that eggplants are planted with loads of pesticide. Is this true?
Anyway, eggplants taste wonderful if sauteed with grounds shallots, dried shrimps and chilli.

Cook eggplant with some salt and turmeric. When cooked add yogurt and have it as a side dish.

oh if you are frying eggplants, peel them first and rub salt on top of them and leave it for about 10mins or till it starts to perspire
and then wipe it with a kitchen cloth and put it in the hot oil!
this will make the bitterness go away!
of course the eggplants in many countries such as singapore are sweet and rarely bitter! so check it out to see if your egg plants are bitter or not!

Do you have to salt or soak eggplant before cooking? Someone told me that it is bitter otherwise.

I found it: baba ghanoush: roast the eggplant in a 400 degree F oven for 20 minutes, peel the skin, puree the eggplant with 1/4 c tahini and 1/4 c lemon juice and 2 cloves of garlic (minced)...place in a bowl, stir in 1 1/2 Tbsp olive oil, chill for 3 hours before serving with baked pita slices, veggies, tortillas........yummy! and apparently very good for you too!!

Actually mine is a question: Is the benefit mainly in the dark purple skin or can we peel the eggplant and still receive the benefits?
