REALAGE TIP

Make a Healthy Nut Even Healthier

Straight out of the can, peanuts are one amazing health food. But you may get more antioxidants if you buy them in the shell and do this: boil 'em.

In a recent study, peanuts boiled in their shells had a significantly higher concentration of disease-fighting phytochemicals -- more than their raw, roasted, or oiled counterparts.

I love boiled peanuts, but, until now, didn't know exactly how to cook
them. Thanks. Couldn't you just boil salted nuts in their shells?

I'm from Ga. & I never tried boiled peanuts until I was 36. I found out that I liked them but they had too much salt & made my legs & ankles swell up. Without the the salted water they just don't taste right though.

I'm concerned about all the chemicals, fungicides etc farmers put on peanuts to grow them. I have seen boiling pots of peanuts along the road and I doubt the water ever gets changed. The water looks like chemical sludge. This can't be good for you!

Visualization helps. When I first tried "bald" peanuts in FL, I thought they were slimy nasty until a Southern Belle suggested that I "think beans" instead of crunchy peanuts that I was accustomed to. It worked. I now like "bald" peanuts.

Oooh, Asian recipe sounds good. I'm concern about peanuts. I heard the 'government' did a study to determine which foods have higher residue of pesticides and peanuts was one of the worst. This was several years ago and I no longer remember the study. Does anyone else? And is there a way those effects could be lessened by cooking perhaps? Maybe boil and change the water and boil some more? I wonder if that would help. OR, go with organic, yah!

Yes, you can buy them in the quick mart gas station stores mostly simmering in seasoned water in crock pots. They are sooo good. I especially like when you bite the shell and the juice squirts out into your mouth. Really a delicious treat.

I'm a yankee transplanted to the south, and I'm the only member of my family who quickly came to love boiled peanuts. Now you say they're good for me? Yippee!

Fantastic recipe with soaked peanuts. Soak 1.5 cups of raw peanuts for 2 hours then make this delightful Indian dish. Put 2 or 3 tbsp veg oil in hot wok add 1/8 tsp fenugreek seeds. these brown instantly. add bag spinach drained pnuts 1 tbsp dark brown sugar 1 hot fresh seeded green chili chopped and a little salt. Stir for few seconds then turn down heat cover and simmer for 20 mins. Take off lid and allow any moisture left to evaporate. Add some grated fresh coconut or toasted dry coconut and stir in. Put in dish and sprinkle with more coconut. Heaven and healthy. One my most popular dishes - thanks to Madhur Jaffrey doyenne of Asian cookery.

Growing up in the south, with boiled peanuts was a part of life. You can buy them from the store already boiled, or from the side of the road, you can even buy them in a can,

I grew up eating boiled peanuts. If you like things spicy, just add some liquid crab boil.

I've heard many times that peanut crops are grown to clean soil of pesticides etc, and then they sell the peanuts! So buying organic is the only way. I wonder if the real issue behind all the recent peanut allergies, is actually an allergy to the chemicals in the soil that the peanuts have been used to clean...are people actually reacting to the chemicals in these peanuts?... just a thought. But still, I think knowing that you are buying peanuts from a healthy soil is key!!
