Pumpkin carving on your autumn agenda? Don't forget to roast up the seeds for a heart-healthy treat.
Pumpkin seeds are a good source of a healthy fat called alpha-linolenic acid (ALA). This fat improves blood vessel health, reduces tissue-damaging inflammation, and has positive effects on blood fats. Before roasting, toss the seeds with a tiny bit of olive oil and, if your kids like extra flavor, add a few spices, such as garlic, cayenne pepper, or lemon pepper.
Alpha-linolenic acid is a precursor of omega-3 fatty acids, and linoleic acid is a precursor of omega-6 fatty acids. Kids' diets today tend to be very high in omega-6 fatty acids but low in omega-3 fatty acids. Over time, this imbalance may contribute to inflammation, blood vessel dysfunction, increased blood clotting, and unfavorable blood lipid profiles, all of which contribute to cardiovascular disease and increased risk of life-threatening heart attacks and strokes down the road.
Increase your children's intake of omega-3s by adding pumpkin seeds, flaxseed oil, walnuts, and canola oil -- all rich in alpha-linolenic acid -- to your family's diet while cutting back on corn oil, rich in omega-6 fatty acids.
