A Sweet Switch
Switch from white potatoes to sweet potatoes and you may help to reduce your diabetes risk.

A recent study revealed that a carotenoid-rich diet helped to improve blood sugar metabolism in men at risk of type 2 diabetes. Diabetes is characterized by poor blood sugar control. Sweet potatoes are a rich source of the carotenoid beta carotene. White potatoes contain almost none.

Potatoes have a high glycemic index, so eat them in moderation. A diet that is heavy in high glycemic index foods may be associated with higher diabetes risk. Sweet potatoes have a slightly lower glycemic index compared to white potatoes and they have lots more beta carotene compared to white potatoes. Beta carotene is the precursor to vitamin A. Adequate vitamin A intake is essential to vision, bone growth, reproduction, and cell division. Aim for no more than 8,000 IU of vitamin A per day. Other sources of beta carotene include carrots, mango, and cantaloupe.
