Ingredients

- 1 onion, chopped
- 1 teaspoon(s) canola oil
- 1 teaspoon(s) curry powder
- 1 can(s) (10-ounce) condensed tomato soup
- 1 can(s) (14-ounce) reduced-sodium chicken broth or 1 3/4 cups water
- 2 tablespoon(s) natural peanut butter
- 1 tablespoon(s) chopped fresh cilantro
- Salt and freshly ground pepper to taste
Directions
- Heat oil in a medium saucepan and sauté onion until softened, 3 to 5 minutes. Stir in curry powder and cook, stirring, for 1 minute more. Add condensed tomato soup and broth or water. Bring to a simmer. Whisk in peanut butter and cilantro. Season with salt and pepper. Serve hot.
