  • .5 cup(s) thinly sliced celery
  • .5 cup(s) light mayonnaise
  • .25 cup(s) plain low-fat yogurt
  • 4  dried apricots, chopped
  • 2  green onions, chopped
  • .25 cup(s) cashews, chopped
  • 8  lettuce leaves
  • 16 slice(s) pumpernickel bread

Directions

  1. Mix all the ingredients, except the bread and lettuce, in a bowl. Season to taste.
  2. Divide equally to make 8 sandwiches on pumpernickel bread, each with a lettuce leaf.
