Ingredients

Dressing Ingredients

  • 14 tablespoon(s) olive oil
  • 1 tablespoon(s) balsamic vinegar
  • 1 small shallot, minced
  • Salt and freshly ground black pepper (optional)

Salad Ingredients

  • 3 cup(s) packed (1 large bunch) arugula, washed and dried
  • 1 cup(s) seedless watermelon, cubed
  • .5 cup(s) low-fat feta cheese, crumbled

Directions

  1. Combine oil, vinegar and shallot; mix well.
  2. Season to taste with salt and pepper if desired; let stand 5 minutes.
  3. Arrange arugula on two serving plates.
  4. Arrange watermelon and cheese over arugula; drizzle with dressing.
