  • .5 teaspoon(s) salt
  • 1 tablespoon(s) baking powder
  • 2 large very ripe bananas
  • .333 cup(s) applesauce
  • .25 cup(s) honey
  • .5 cup(s) soymilk

Directions

  1. In a large bowl, combine the flour, salt, and baking powder.
  2. In a blender, puree the bananas; add the applesauce, honey, and soymilk. Mix well.
  3. Pour the banana mixture into the dry ingredients and stir until just moistened.
  4. Fill paper muffin cups with the batter and bake at 350 degrees for 30 minutes or until lightly brown and firm.
