Ingredients

U.S. Metric Conversion chart
  • .5 cup(s) cooked corn kernels
  • 2 tablespoon(s) diced green chilies
  • 2 cup(s) cooked black beans
  • .5 cup(s) fresh tomatoes, chopped
  • 4 tablespoon(s) olive oil
  • 2 tablespoon(s) chopped fresh cilantro
  • juice of 1 lime

Directions

  1. Mix all the ingredients together except for the lime juice.
  2. Add the lime juice immediately before serving.
  3. To reduce fat and calories, serve with baked tortilla chips, toasted pita triangles, or fresh vegetables.
