- 2.5 cup(s) water
- 1 cup(s) brown rice
- 2 cup(s) baby spinach, or arugula
- Salt and freshly ground pepper, to taste
Directions
- Bring water and rice to a boil in a medium saucepan. Cover, reduce heat to low and simmer, covered, until tender and most of the liquid has been absorbed, 40 to 50 minutes. Stir spinach (or arugula) into the hot rice, cover and let stand for 5 minutes. Season with salt and pepper.
