Ingredients

  • 2.5 cup(s) all-purpose flour
  • 1 tablespoon(s) sugar
  • 1.5 teaspoon(s) cream of tartar
  • .75 teaspoon(s) baking soda
  • 2 tablespoon(s) butter, chilled
  • .25 cup(s) apple butter, chilled
  • 8 ounce(s) nonfat vanilla yogurt, chilled
  • 2 teaspoon(s) grated orange peel, chilled
  • 2 tablespoon(s) orange juice, chilled
  • .75 cup(s) dried cranberries, chilled
  • 1  egg

Directions

  1. In a large bowl, mix the flour, sugar, cream of tartar, and baking soda.
  2. Cut in the butter, apple butter, and yogurt.
  3. Separately, whisk together the egg and orange juice and then add to the flour mixture; stir until just blended (overmixing will make scones tough).
  4. Mix in the orange peel and cranberries. Batter should be lumpy.
  5. Spoon onto a lightly floured baking sheet. Bake at 400 degrees for 10 minutes. Serve warm.
