- 2.5 cup(s) all-purpose flour
- 1 tablespoon(s) sugar
- 1.5 teaspoon(s) cream of tartar
- .75 teaspoon(s) baking soda
- 2 tablespoon(s) butter, chilled
- .25 cup(s) apple butter, chilled
- 8 ounce(s) nonfat vanilla yogurt, chilled
- 2 teaspoon(s) grated orange peel, chilled
- 2 tablespoon(s) orange juice, chilled
- .75 cup(s) dried cranberries, chilled
- 1 egg
Directions
- In a large bowl, mix the flour, sugar, cream of tartar, and baking soda.
- Cut in the butter, apple butter, and yogurt.
- Separately, whisk together the egg and orange juice and then add to the flour mixture; stir until just blended (overmixing will make scones tough).
- Mix in the orange peel and cranberries. Batter should be lumpy.
- Spoon onto a lightly floured baking sheet. Bake at 400 degrees for 10 minutes. Serve warm.
