Ingredients

  • 1/2 cup(s) canned corn
  • 2 tablespoon(s) chopped red onion
  • 3  egg whites
  • 1  egg
  • 2 tablespoon(s) fat-free milk
  • 1/4 teaspoon(s) pepper
  • 2 tablespoon(s) crumbled goat cheese
  • 1 tablespoon(s) chives

Directions

  1. Sauté the corn and onion in a hot, nonstick skillet for 2 to 3 minutes.
  2. Beat the eggs, milk, and pepper together and then add to the skillet.
  3. Cook for 2 minutes until the eggs begin to set.
  4. Gently lift the edges so that the uncooked portions flow to the outer edge. Cook 2 minutes more.
  5. Scatter the cheese and chives over the eggs.
  6. Fold the omelet and cook until the cheese melts, about 1 minute.
  7. Top with remaining chives before serving.
