Ingredients

- 1/2 cup(s) canned corn
- 2 tablespoon(s) chopped red onion
- 3 egg whites
- 1 egg
- 2 tablespoon(s) fat-free milk
- 1/4 teaspoon(s) pepper
- 2 tablespoon(s) crumbled goat cheese
- 1 tablespoon(s) chives
Directions
- Sauté the corn and onion in a hot, nonstick skillet for 2 to 3 minutes.
- Beat the eggs, milk, and pepper together and then add to the skillet.
- Cook for 2 minutes until the eggs begin to set.
- Gently lift the edges so that the uncooked portions flow to the outer edge. Cook 2 minutes more.
- Scatter the cheese and chives over the eggs.
- Fold the omelet and cook until the cheese melts, about 1 minute.
- Top with remaining chives before serving.
