Ingredients

U.S. Metric Conversion chart
  • 1 cup(s) organic quinoa
  • 2 cup(s) water
  • .5 cup(s) dried cherries
  • .5 cup(s) dried cranberries
  • .5 cup(s) unsweetened apple juice
  • 2  bananas
  • 1 teaspoon(s) grated orange zest
  • 1 teaspoon(s) vanilla extract
  • .5 teaspoon(s) cinnamon

Directions

  1. Rinse quinoa in cold water if saponin has been removed; if not rinse in hot water.
  2. Add rinsed quinoa to boiling water; reduce heat to low, and simmer for 7 minutes.
  3. Add dried cherries and cranberries and simmer until liquid is absorbed, about 5 to 7 minutes.
  4. While quinoa is cooking, combine remaining ingredients in food processor and puree until smooth.
  5. Remove quinoa from heat, combine pureed mixture with quinoa, and mix well.
  6. Place in serving bowls and refrigerate until ready to serve.
