Ingredients

  • 5 cup(s) peeled and chopped sweet potatoes
  • 1 cup(s) chopped onion
  • 2 cup(s) chopped carrot
  • 1 teaspoon(s) olive oil
  • .25 cup(s) sesame seeds
  • .125 teaspoon(s) salt
  • .125 teaspoon(s) pepper

Directions

  1. In a large bowl, mix the sweet potatoes, onion, carrot, and oil.
  2. Place the mixture on a cookie sheet and bake at 350 degrees for 1 hour or until the potatoes are tender.
  3. Combine the sweet potato mixture, sesame seeds, salt, and pepper in a food processor and process until the dip is smooth.
  4. Serve chilled with raw vegetables, such as broccoli, cauliflower, and celery sticks.
