Ingredients

- 1 Japanese eggplant, chopped
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 small zucchini, chopped
- 1.5 teaspoon(s) olive oil
- .5 teaspoon(s) balsamic vinegar
- salt and pepper
- 4 whole-wheat flour tortillas
- fresh spinach leaves
- 1 ounce(s) feta cheese
Directions
- Soak the eggplant in a bowl of salted water (to remove bitterness from the skin).
- Drain the eggplant and toss with the peppers, zucchini, olive oil, balsamic vinegar, and salt and pepper.
- Wrap the mixture in foil. Grill until heated through, but not soft.
- Line the tortillas with spinach leaves and spoon on the grilled veggies.
- Sprinkle lightly with feta cheese and roll like a burrito.
