Ingredients

  • 1  Japanese eggplant, chopped
  • 1  green bell pepper, sliced
  • 1  red bell pepper, sliced
  • 1 small zucchini, chopped
  • 1.5 teaspoon(s) olive oil
  • .5 teaspoon(s) balsamic vinegar
  • salt and pepper
  • 4  whole-wheat flour tortillas
  • fresh spinach leaves
  • 1 ounce(s) feta cheese

Directions

  1. Soak the eggplant in a bowl of salted water (to remove bitterness from the skin).
  2. Drain the eggplant and toss with the peppers, zucchini, olive oil, balsamic vinegar, and salt and pepper.
  3. Wrap the mixture in foil. Grill until heated through, but not soft.
  4. Line the tortillas with spinach leaves and spoon on the grilled veggies.
  5. Sprinkle lightly with feta cheese and roll like a burrito.
