Ingredients

  • 16 ounce(s) dried soba noodles
  • 1 tablespoon(s) peanut oil
  • 1 tablespoon(s) sesame oil
  • .75 cup(s) seasoned rice vinegar
  • 2 cup(s) julienned cucumber, peeled, seeded
  • 1 cup(s) julienned carrots, peeled
  • 3 cup(s) fresh shiitake mushrooms, stems discarded and caps sliced thin
  • 6  green onions, thinly sliced
  • 1 tablespoon(s) sesame seeds

Directions

  1. Toast the sesame seeds in a skillet.
  2. Boil the soba noodles to al dente stage, about 8 minutes.
  3. Drain and rinse the noodles in cold water; drain again.
  4. Transfer the noodles to a large bowl. Add the oils and toss to coat.
  5. Mix the remaining ingredients, except the sesame seeds, with the noodles.
  6. Season with pepper, sprinkle with the sesame seeds, and serve.
