Ingredients

  • 1 cup(s) popcorn kernels, air-popped
  • 1 cup(s) whole almonds
  • 1.25 cup(s) raisins
  • .5 cup(s) brown sugar, packed
  • .25 cup(s) light corn syrup
  • 2 teaspoon(s) vanilla extract
  • .5 teaspoon(s) almond extract
  • .5 teaspoon(s) salt
  • .25 teaspoon(s) baking soda

Directions

  1. Mix the first three ingredients in a baking pan.
  2. In a saucepan, whisk together the brown sugar and corn syrup over medium-low heat until the sugar dissolves.
  3. Increase the heat and boil without stirring until a candy thermometer registers 255 degrees.
  4. Stir in the remaining ingredients and pour the syrup over the popcorn mixture, gently stirring to coat.
  5. Bake at 250 degrees until the caramel feels dry, about 1 hour and 20 minutes.
